Winter Cheer Bulletproof Salad
My mother's invention! A unique red, white and green salad with juicy sweet strawberries, soft avocado, a satisfying crunch from nuts and a spicy kick from ginger. This salad is about as Bulletproof as you can get and I've never met anyone who can resist it.
Ingredients
1 cup slivered green cabbage
1 ripe avocado, cubed
5 large strawberries, sliced (optionaly reserve one berry for garnish!)
3 T raw pecans or cashews, lightly toasted
3 t lemon juice, divided
¼ t pink Himalayan salt
2 T olive oil
½ t grainy mustard or Dijon mustard
2 t raw organic honey
½ t slivered ginger
Optional: soft boiled egg to make this into a heartier salad.

Step 1
Sliver cabbage into razor thin slices. Place in bowl with salt and 1 teaspoon lemon juice. Massage and squeeze with your hands until cabbage breaks up a bit.
Step 2
While the cabbage rests, toast nuts in a small frying pan until hot. Be careful not to burn. Remove nuts to a plate to let cool.

In your serving bowl, whisk olive oil, remaining 2 teaspoons lemon juice, mustard, ginger and honey until well-combined.

4. Into serving bowl, add cabbage, avocado, strawberries, nuts and and toss well.
step 5
Top with your prettiest strawberry and serve immediately! (Top with optional egg as well).
